Last week Cason had soccer camp. Most of the time Mike would take him and I would stay home with Maddie because practice fell right around the time she would nap. But one of the days, Mike and I swapped roles and I took Cason to practice.

This isn’t the first time I’ve seen this type of behavior. He tends to shy back in a group or with new people. But with the people he knows he’s crazy, silly and himself.

How do you encourage your child to be confident in who they are. Or to be brave and step out to make new friends.

Summer’s not done yet people. We may start school on Wednesday over here but it is still dreadfully hot.

For this pasta I used the ribbon attachment on the spiralizer to make thicker more ribbon like noodles (almost like fettuccini) instead of spaghetti. I like to serve the zucchini noodles raw instead of cooking them. I like the crunch and they keep their form instead of going mushy.

Then I pan seared the shrimp. Once the shrimp was cooked I removed them from the pan and blistered the tomatoes with fresh garlic. I mixed everything in a bowl and finished it off with fresh basil and creamy goat cheese.

Y’all the kicker here is the goat cheese. My favorite bite was the zucchini with a little bit of the goat cheese and shrimp. It’s absolutely delicious. Our family of three (eaters.. maddie can’t have this just yet) devoured this entire bowl in one sitting.

The best part about this shrimp pasta is it’s on the table in 30 minutes. I can’t wait to hear what you think.

Ingredients

Shrimp Zucchini Pasta

  • 11/2lbs jumbo shrimp, peeled and deveined
  • 1汤匙grape seed oil
  • 1teaspoon干牛至
  • 1/8茶匙red pepper flakes
  • salt & pepper to taste
  • 3.大型西葫芦,螺旋化
  • 2oz. goat cheese, crumbled

Blistered Tomatoes:

  • 2汤匙grape seed oil
  • 2杯cherry tomatoes
  • 4.garlic cloves, minced
  • 2汤匙白色烹饪酒
  • salt & pepper to taste
  • 1/4 cup新鲜的罗勒,雪纺

Instructions

  1. 添加虾准备一个大碗里。赛季阿regano, red pepper flakes, salt and pepper. Toss to coat.

  3. Next, add 2 tablespoons of grape seed oil to the same skillet you just cooked the shrimp in. Add cherry tomatoes to the pan and cook until they are slightly charred and start to blister (pop), about 4-5 minutes. Stirring throughout. Then minced garlic to the pan, cook for 30 seconds to 1 minute (stirring the entire time), just until the garlic starts to become fragrant but not burn.
  4. Immediately add white cooking wine and stir everything around. Cook for 1 minute and remove from the heat.
  5. To a large bowl add zucchini noodles, top with blistered tomato mixture, crumbled goat cheese, pan seared shrimp and fresh basil. Gently toss everything together and serve.
